My hubs Joe and I have been trying to be more health conscious and that basically involves what we eat. We have been making efforts to include vegetables in each meal and stick to healthier snacking options. I want to share with you a recipe for a Chicken + Veggies dish I made a while back. I posted the meal on FB, so I thought it would be helpful to share the recipe for those who asked how I made the dish.
I usually get my chicken from Target because it’s pre-seasoned/marinated and makes the chicken a little more tender when cooked. The chicken for this meal was the garlic and herb chicken breast by Market Pantry.
Ingredients:
- Garlic and herb seasoned chicken
- 1 Zucchini (fresh)
- 2 Broccoli stalks (fresh)
- Tomatoes
- Garlic (cloves or minced)
- Olive oil
- Crushed red peppers
- Adobo seasoning
- Onion powder
- Cumin (I use cumin in everything)
Preheat the oven on 350. Grease the bottom of a glass baking dish with olive oil. The chicken should be thawed, but if it’s not it can be defrosted in the microwave. Once it is thawed, sprinkle a little bit (I don’t measure, so I don’t know how much – sorry) of adobo seasoning, onion powder, crushed red peppers and cumin over the chicken. Let that sit. Cut up the zucchini and broccoli and cover the bottom of the pan with both. Lay the chicken on top. Cut up the tomatoes and garlic and put that on top of the chicken (if you have minced garlic you can sprinkle that on top). Put it in the oven for 20-30 minutes until the chicken is cooked all the way through. Enjoy!
